A chop bar is a step up from a food stand in every dimension: premises, seating, permits, staff, and a lunch rush that has to carry the whole day.
The business is not “serving food”. It is serving a great many people in about two hours, and being ready for it.

Where it works
A chop bar wants the working population above all — people who are at work near you at noon and cannot go home to eat. Offices, workshops, markets, lorry stations, hospitals, schools.

Population is not lunchtime footfall
The census counts where people sleep, not where they eat lunch. A dormitory district can look excellent on paper and be empty at midday. Stand on the pavement at half past twelve and count. There is no substitute and no dataset that replaces it.
The paperwork
- Environmental health clearance for the premises, from the assembly.
- Food handler medical certificates for you and every member of staff.
- Business operating permit.
- Register the business with the ORC.
- SSNIT for staff, from the first employee.
- Fire and waste arrangements, which the assembly will ask about.
The economics
- Cook to a number. Portions planned, portions sold, portions left. Write it down daily; it is the only way to stop losing money to waste.
- The lunch hour is the business. Everything before it is preparation and everything after is a bonus.

- Gas and charcoal move with the cedi and will eat a thin margin quietly.
- Takeaway packs cost money. Price them in or charge for them.
What closes chop bars
- Waste. Cooking for a crowd that did not come, repeatedly.
- Water. Then buying it by tanker.
- Failing an inspection, and closing while it is fixed.
- The lunch trade moving — an office relocates, a site finishes.
- No records, so a slow month and a failing business look identical.
