Cassava and plantain pounded together into a smooth, elastic dough, served in a bowl of soup: light soup, groundnut soup or palm nut soup.
You do not chew fufu. You pinch off a piece with your right hand, dip it in the soup, and swallow. Chewing it marks you out instantly, and everyone at the table will notice with delight.
Traditionally pounded by hand in a mortar with a pestle, which is a two-person job and a distinctive sound in a Ghanaian neighbourhood. Machines and instant fufu flour are now common.
